Hunting and gathering are integral parts of our ancestral DNA. Searching for sustenance is a completely natural and obvious way to obtain food, it was once common but has now been replaced by the ever-efficient likes of supermarket aisles or Deliveroo apps. But what have we lost for this efficiency? To gather food from the wild, you must truly know the organism you choose to collect – it’s life cycle, shape, smell, habitat, seasonality and intrinsic value. It demands respect.

Searching for wild food has a wonderful effect on how people view the natural world. It immerses us within the world around us. We see things in a new light; a walk will never be the same again.

Foraging on the Estate is not just about the wild food around us, it is an encouragement to look beyond the beauty of nature as a backdrop and appreciate the exquisite detail and complexity of a world we belong to.

For your guide, we are thrilled to be working with the human foraging encyclopaedia George Fredenhan AKA Flavour Fred. George is a professional forager with over 20 years’ experience using wild flavours in culinary uses, preservation, distilling and has an intricate knowledge of the history that surrounds his ingredients.

FLAVOUR-LED WALKS

George’s flavour-led walks are an introduction to foraging for flavour where he shares rules and regulations, identification techniques, and the risks associated with wild food and drink.

Throughout the walk you will identify seasonal ingredients, comparing and contrasting them to their more dangerous counterparts. George will regularly visit certain techniques for preservation and ways in which one can create tasty wild ingredients to use at home, along with a few tasters prepared earlier along the way.

The Estate is home to a variety of habitats including hedgerows, water meadows, chalk streams, mixed woodlands, arable fields and a vineyard. Private bookings can be made for groups of friends or staff away day sessions with overnight accommodation available on the Estate with meeting and event spaces.

If you’re looking for a private, tailored experience for your group, whether that be for business or pleasure, we have a number of bespoke foraging offers, from all-inclusive day-long foraging with nature-based cocktails, to three-hour wild pizza parties.

3-hour walk followed by an indoor meal with a spread of plates that utilise many of the items seen on the walk & pre-made wild pickles and preserves

3-hour forage followed by a selection of wild items, various plates and dishes also utilising the wild meat from the Estate including fallow deer, hare, rabbit, wood pigeon. Also includes a glass of The Grange Sparkling Wine.
